These carrot cake cookies might seem a little bit out there, but I promise they will capture your taste buds! A delicious decadent treat, with a wholesome twist. Perfect as a snack with a brew or even breakfast. If you want to up the naughty, then whipping up my vegan salted caramel for dipping is an awesome addition.

MAKES 10 cookies

2 ripe bananas

2 cups of whole oats

1 cup of peanut butter

2 carrots grated

tsp cinnamon

1/2 tsp baking powder

1/2 tsp bicarbonate soda

3 tbsp maple syrup (can be swapped for honey)

3 tbsp of melted coconut oil


  1. Pre heat oven to 180.c

  2. Line baking tray with greaseproof paper

  3. Mash bananas until smooth

  4. Mix in wet ingredients

  5. Add remaining ingredients and stir

  6. ​Use 2 tbsp of mix onto tray to form each cookie

  7. Bake for 15 - 20 mins or until firm and golden
